Vegie Beef Burgers

My little toddler lovers beef burgers, so I have decided to start adding a few more vegetables to my own home made burgers. This is in an attempt to ensure that he gets regular serves of vegetables . So these are vegetables in disguise.

This recipe makes 16. 500g beef mince, 1 x Onion Diced, 1 x Carrot Grated, 1 x Zucchini Grated, 1 x Egg Whisked, 1 x Tablespoon of Tomato Sauce, 1 x Teaspoon Garlic Powder Salt and Pepper and 1 x Tablespoon Oil.

Preheat oven to 180 degrees. Mix all of the ingredients other than the oil in a large bowl. Roll out 16 equal portions of the mixture and shape like burgers. Heat oil in a frying pan over a moderate heat. Fry half of the burgers at a time, cooking for at least 3 minutes on each side or until brown and crisp. Place all of the cooked burgers on an oven tray and cook for a further 5 minutes in the oven.

I usually cook them further in the oven to keep them moist. This way I only fry them for a few minutes to brown them, leaving them still raw in the middle. I always found leaving them in a frying pan until cooked through usually saw them well cooked on the outside and dry.

Serve with vegetables or in a bread roll with salad. My family even enjoy eating these cold.
