Slow Cooker Moroccan Vegetables

This is a great way to have a filling vegetarian dish. We don’t eat too much eat meat at home, so it is nice to find ways to cook easy, tasty vegetable dishes. Sometimes with the lack of proteins it can be hard to have a variety of dishes and I find myself cooking the same things each week. This was definitely one of my outside the normal dishes and it worked well and was so tasty.

Ingredients (Serves 6 – 8)

  • 1 large zucchini, diced.
  • 1 large egg plant, diced
  • 1 large brown onion, diced
  • 1 large red capsicum, diced
  • 4 cloves garlic, minced
  • 1 cup diced pumpkin
  • 1 tin of diced tomatoes
  • 3 whole tomatoes, diced
  • 1 large red chilli, diced
  • 1 small punnet cherry tomatoes
  • 1 teaspoon cinnamon
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • 1 tablespoon olive oil

Place all of the prepared ingredients in a large slow cooker and mix. Turn the slow cooker on to high and cook for 4 hours. Serve hot and with a dollop of natural yoghurt if preferred.
