Khobz Eddar (Algerian Sesame Bread)

This month the MENA cooking club dishes we got to choose from to cook were Algerian. Algeria has morocco as a neighbouring country. However it seems that they have a very heavy French and Spanish influence when it comes to food.

Well basically I opted to bake the bread “Khobz Eddar” and I could not find a recipe for this dish in English. There were mostly all written in French, however I did manage to find a couple in Arabic. Anyway this bread is the best-known and most popular Algerian homemade bread. It is used for simply snacking or spread with butter. It is also used to accompany dishes like tagines with sauces.

This recipe was super easy and both my husband and I found the bread very yummy. I found it especially nice when hot and spread with butter. I will most definitely make this again. However I think I would use smaller quantities so that it can be all eaten straight away as fresh bread. Below is the recipe I used which was adapted from “Samira on TV”.

Ingredients

  • Semolina 500grams
  • Milk 1 and ½ Cups
  • Sugar 1 Teaspoon
  • Salt 1 Teaspoon
  • Powdered Yeast 2 Teaspoons
  • 4 Eggs
  • Oil 1 Cup
  • Butter 1 Tablespoon
  • Black Seeds 2 Teaspoons
  • Sesame Seeds 2 to 3 Teaspoons

Place all of the ingredients except 1 egg, the butter and the sesame seeds into the bowl of a stand mixer. Put the dough hook on the stand mixer and on high speed mix ingredients for approximately 5 minutes or until all the ingredients come together nicely to form a dough. If the mix is too wet simply add some more semolina, if the dough mixture feels to dry simply drizzle in some more milk.

Once the dough is formed turn out into a ball, place in a clean bowl, cover with a cloth and leave for at least 1 hour. The mixture should have now increased in size. Pre heat your oven to 180 degrees and grease a large baking tray with the butter. With butter on your hands take the ball of dough and spread it into the baking dish. Score the top of the bread with a knife. Whisk the remaining egg and brush over the top and then sprinkle over the sesame seeds. Bake in the oven for approximately 25 to 30 minutes.

Remove from oven and enjoy immediately. Keep cooked bread in an airtight container.

    Wow! the last pic of the bread in oven is so stunning! I loved how it has turned out. Yeah, I too found most of the videos non-english but we still make sense out of it right? 😛
