Again Sunday is meal preparation day and I thought as we are certainly in Autumn now the meals need to slowly change. So decided to still have salads, but would start to slowly introduce the hearty meals of soups and stews. So I choose to make a very simple and healthy vegetable soup.
If you just ensure that the vegetable stock you use is salt reduced or alternatively you use a stock that you have made yourself . That way you can ensure a healthy dish for your family, that they can snack on as much as they like.
Ingredients; (Serves Four)
- 1 teaspoon curry powder
- 2 teaspoons vegetable stock powder
- 4 cups water
- 1 carrot diced small
- 3 potatoes diced large
- 1 brown onion diced small
- 3 stalks of celery diced small
- 1 cup pumpkin diced large
- 1 tablespoon olive oil
Method;
Heat oil in a deep heavy base saucepan. In the hot oil fry onion, celery and carrot until translucent and fragrant. Add potatoes and pumpkin and fry for a further few minutes. Add the curry powder and vegetable stock powder and fry off for one minute. Add water, bring to the boil and then reduce heat to low. Simmer over low heat for 15 to 20 minutes or until all vegetables are tender.
Serve with crunchy bread or croutons.
