Spinach and Asparagus Salad

This salad is so easy to throw together and it is great for a fast lunch. This salad is super tasty with the creamy pine nuts and still feels like a light meal. You could even use this as a side dish.

Ingredients (Serves Two)

  • Bunch Asparagus
  • Bag Washed Spinach
  • 1/2 Cup Grated Parmesan Cheese
  • ¼ Cup Pine Nuts
  • 1 Whole Lemon
  • Olive Oil

Toast pine nuts in a pan with 1 spoon of olive oil until browned and fragrant. Set aside.

In the same fry pan grill the asparagus in another spoon of olive oil for approximately five minutes. Keep turning during cooking. Remove asparagus from pan and slice into 2cm pieces.

In a large bowl combine the spinach, warm asparagus, pine nuts, parmesan and squeeze over fresh lemon juice. Serve immediately.
