This recipe serves 12. Ingredients; Chai Seeds, Halved Macadamia Nuts, Raw Cashews, Slivered Almonds, Dried Shredded Coconut, Sesame Seeds, ½ – ¾ Cup of Honey and Coconut Oil

Dry ingredients should total 3 cups, so specific amounts of each are a personal choice. Mix all of the dry ingredients together. Preheat oven to 180 degrees and line a square baking tray with baking paper.

Melt honey for 20 seconds in the microwave, pour over the dry ingredients and mix quickly. Just ensure all of the nuts are coated with honey. Spread the mixture evenly in the prepared tray. Rub your hands with a little coconut oil and use your hands to press the mixture in the tray firmly and evenly, the oil stops it from all sticking to your hands.

Bake in the oven for 25 to 30 minutes, you want everything to look golden brown and you also want to see evidence that the honey has been bubbling. Remove from tray leaving the paper in place underneath. Let this cool for about 15 minutes. Then place another piece of baking paper over the top and flip the whole thing over, this can be quite tricky, but when you do this once you will find a way that suits you to do this with ease. The only reason for doing this is to ensure that the honey still spreads across all of the nuts through the cooling process and doesn’t just all run to the bottom.

Wait now until completely cool, then slice into 12 bars with a sharp knife. I usually sprinkle more sesame seeds on the out side of both sides whilst cooling this just makes it less sticky on the fingers when you actually eat it. I wrap all of my bars in baking paper; place them in an air tight container and refrigerate. They will keep for at least a week like this.
