Vegetable Burgers

These are something I put together for a healthy lunch. The first few times I made these I really used too many ingredients and therefore had too much mixture. Then I would be there forever cooking batches of them and having to deal with the leftovers. This time however I made them using only what I needed and in a short amount of time.

This recipe will make 8 burgers. You will need 1 zucchini grated, 1 carrot grated, 1 potato grated, 1 onion grated, 1 long red chilli finely chopped, 1 egg, 3 tablespoons of plain flour, salt and pepper for seasoning and 2 tablespoons of oil for frying.

Mix all of the ingredients together in a large bowl. Heat oil in a deep frying pan until really hot. I use egg rings that I have oiled to portion my burgers out evenly. See photo for how this looks. I spoon the mixture into each ring and I once I have them all filled I remove the rings straight away and continue to cook the burgers. Turn the burgers once, so that both sides are cooked. They generally take around 8 -10 minutes cooking time depending on how thick you make them. Continue this process until all the mixture is used. I got eight burgers using the egg rings.

Use

Serve immediately warm, with lemon wedges and mayonnaise on the side. If having these for a lunch a simple salad of dressed rocket to accompany them is perfect.
