This coleslaw has a slight twist to your ordinary coleslaw. That is the inclusion of the pine nuts. These nuts have a distinct flavour that just match the cabbage, even only adding a small amount of the nuts is like adding a creamy, oily dressing to the salad. This is a super easy recipe and by adding the purple cabbage the colours are amazing. This is the ultimate bring along dish when you need to go somewhere and you need to take something. Ingredients; (serves 6)
- ½ head of purple cabbage
- 1 red onion
- 2 carrots
- ¼ cup of pine nuts
- 1 tablespoon of mayo
- Juice from 1 lemon
- 1 tablespoon of olive oil
Method;
Slice the cabbage very into very fine shreds. Slice the onion into very fine shreds. Slice or grate the carrot into very fine shreds.
Toast the pine nuts in a fry pan with the oil until a nice colour of brown.
Combine all of the ingredients into a large bowl and mix well. Serve. This salad last days in the fridge and still maintains its crunch.
