Vegetarian Rolls

Ingredients; 2 Large Zucchini, 2 Carrot, ½ cup Peanut Butter, 2 Sticks Celery, Bunch Coriander, 2 Cucumber, 1 Long Red Chilli.

Slice zucchinis thinly lengthways, I used a mandolin to get them all even. julienne all ingredients except for the coriander and chilli which needs to be finely diced.  Lay all of the zucchini slices out flat on your work bench. Using your microwave melt slightly the peanut butter to make it easy to spread on the zucchini slices.

Spread an even thin amount of the peanut butter on each slice of zucchini and then place a few pieces of each julienned vegetable at one end of the zucchini slice. Top with a little of the diced chilli and coriander. Roll the zucchini up tight, starting from the bottom. The moisture in the zucchini will help the roll stay together. Stand the roll upright and trim any vegetables that are unevenly sticking out of the top of the roll, I use scissors to do this.

This little finger food can also be made well in advance. I pack mine tight, standing upright in an air tight container in the fridge. They are still fresh and crunchy for up to 2 days.

      Hi, I think you are asking what julienne means? which if so it means a potion of food cut into thin, short strips. I hope this helps. These really are yummy and everyone at my work love them. I love the fact that even if you make day before they hold and are super crunchy the next day. Enjoy.
