Potato Salad

DSCF6478Potato salad is my go to easy salad recipe. I like to make this and take to BBQ’s or gatherings. It is easy prepared, can be prepared in advance and last for days in the fridge. If you want to go down to the detail of making your own mayonnaise, then this is something that would take the whole thing a bit longer. Anyway for me I have not yet gained the confidence to make my own mayo. This is instead the easy potato salad for any busy person to make.

Here I have shown two different ways I have made it but it basically just depends on what you have available. In one circumstance I have used chives and in the other I have used parsley. I will admit that the chives are much better, as potato and chives are a match made in heaven.

Ingredients; (Serves 6)

  • 8 x Potatoes (firm variety, not creamy)
  • ½ cup good quality full fat egg mayonnaise
  • ¼ cup green herbs (chives or parsley)

Wash and pat dry the potatoes. Leaving the skin on dice the potatoes into large pieces. Cook the potatoes in a large pot of boiling water. Once the potatoes are in the water and the water is rapidly boiling cook for no more than 12 minutes. You want the potatoes to be able to hold their shape; therefore they cannot be over boiled. Drain the water and leave them to cool. When the potatoes are slightly cooled any mayo and herbs and mix well but gently. Refrigerate until you are ready to eat. I like to eat mine at room temperature.
