This was a very easy dish to make. You can easily eat these as a light meal or snack. I think this recipe made me about 12, but this depends on how generous you are.

4 x Sheets Ready Made Puff Pastry, 2 x 200g Tubs Ricotta Cheese, 1 500g Box Frozen Spinach, 1 x Bunch of Fresh Spinach, 1 x Onion, Diced, 1 x Tablespoon Olive Oil, 2 x Garlic Cloves, Minced, I x Egg, Whisked, Salt and Pepper and Black Seeds

Preheat the oven to 180 degrees. Line a two baking trays with baking paper.

Fry the onion, garlic and all of the spinach off in a frying pan with the olive oil, until all is cooked. In a large bowl stir the ricotta, spinach mix and egg together and season this well with salt and pepper.

Cut each sheet of pastry into four squares, place two spoonful’s of the mixture in the middle of each square. Bring two of the corners together, making a triangle pinching all edges of pastry together, followed by twisting the two bottom ends. Place each one on the baking trays, sprinkle with the black seeds. Bake in the oven for an average of 25 – 30 minutes or until golden and cooked through. Cool on a wire tray briefly before eating.
