Ingredients; (serves 6)
- 250gm dried macaroni pasta
- 1-tablespoon mild American mustard
- ½ cup m of full fat egg mayonnaise
- ½ teaspoon of your favorite curry powder
- ½ cup diced celery
- ½ cup corn kernels (tin)
- ½ cup diced carrot
- ½ cup diced capsicum
- ½ cup diced spring onions
Method;
Cook pasta according to the directions on the packet. Do not overcook you want the pasta to hold its shape. Leave the pasta to cool. Dice all of the vegetables into small pieces. Add the corn, capsicum, celery, capsicum, onions, curry powder, mayonnaise, mustard and cooked pasta into a large bowl and mix well. Refrigerate until ready to serve. This is great for a BBQ or a lunchtime salad. It’s healthy, easy to prepare and lasts for days in the fridge
