This recipe serves 4 – 6. Ingredients; 4 Firm Fish Fillets, and 1.5 Cups of Cooked Rice. Sauce Mix Ingredients; 3 Tomatoes – diced, 1 Bunch Dill – chopped, 1 Bunch Coriander – chopped, 1 Large Teaspoon Pomegranate Molasses, 2 Onions – diced, 5 Cloves Garlic – diced, 3 Tablespoons Tomato Paste, 2 Dried Limes – pierced and 1.5 Cups Water. Spice Mix Ingredients; 1 Teaspoon Turmeric, 1 Teaspoon Salt, 1 Teaspoon Pepper, 1 Teaspoon Cumin and 1 Teaspoon Cardamom.

Kuwaiti Fish Stew

Mix together all of the spices and coat fish fillets in this mix. Fry onions and garlic until translucent in a little oil. Once this is done add all other ingredients except the fish and water and fry for a further 5 minutes. Add water bring to the boil, turn down the heat and let simmer for a further 20 minutes. Meanwhile in another pan fry the fish in oil until cooked to your liking. When ready to serve spread rice on plate, top with fish fillets and then cover with sauce mixture.
