Roasted Vegetables

  • 2 Creamy Delight Potatoes
  • 1 Zucchini
  • 2 Carrots
  • ¼ Kent Pumpkin
  • 2 Rosemary stalks
  • Salt and pepper
  • ½ cup of olive oil

Method;

Preheat oven to 180 degrees. Wash all of the vegetables. Peel the pumpkin, potatoes and carrots. Chop all of the vegetables into large wedge pieces. Place all of the vegetables in a deep oven tray. Drizzle the olive oil over all of the vegetables and give everything a good seasoning of salt and pepper.

Roast in the oven for approximately 60 minutes, or until vegetables are tender inside and crisp on the outside. Turn the vegetables once during the cooking. Serve as a side component with any roasted meat or protein. Or alternatively enjoy as a healthy vegetarian dish on its own.DSCF6356DSCF6350
