Homemade Pizza

IMG_3848Making pizza’s like this can generally take some time. We enjoy doing this on the weekend. Sitting talking at the kitchen bench makes a whole part of the pizza making enjoyable and a family activity. The other thing that usually happens is the pizza’s are cut and shared off a board at the kitchen bench whilst more pizza’s are in the oven cooking. So with this recipe cooking definitely rolls into the eating and then into the cooking again, but that is then fun of it I think.

Ingredients (Makes 8 Pizza’s)

  • 1 cup greek yogurt
  • 2 cups plain flour
  • 1 teaspoon salt
  • 1 ½ cups of tomato passata
  • 1 bunch of basil, chopped roughly
  • 2 cloves of garlic minced
  • 2 cups of grated cheese
  • 4 sausages of kabana. (or any salami of your choice)
  • 1red onion
  • 1 red capsicum
  • 1 zucchini
  • 1 bag baby spinach
  • 1 small punnet of mushrooms

Method

Base;

Mix flour, yoghurt and salt together and knead until you get a smooth dough. Put aside, covered and let the dough rest for 30 minutes. After the resting time cut the dough into 8 equal portions. Roll each portion out on a floured surface into a round pizza shape. I make mine quite thin, as this dough is very pliable. Place all of the pizza bases on oven trays lined with greaseproof paper.

IMG_3833Sauce;

Heat oil in a frying pan over a high heat. Add the garlic and fry until golden brown. Add the tomato passata, bring to the boil and then reduce the heat. Add the basil and let the sauce simmer for around 15 minutes. This simmering will allow the flavours to develop into a rich pizza sauce.

Toppings;

Slice the kabana thinly. Slice the onions, capsicum and mushrooms thinly. Thick grate the zucchini. Wash the spinach, if required. I prepare all of these then put them in bowls all together for ease when it comes to assembly time.

Assembly;

For each pizza place two heaped dessert spoons of the sauce on the dough and spread around with the back of the spoon to cover all of the base. Spread a small handful of each of the toppings evenly across the entire base. Finish last with the grated cheese. Repeat this process until all of the pizzas are made.

Cook pizzas in a preheated oven. The temperature should be 200 degrees and ensure to always put the pizzas into a very hot oven. Each pizza should only take around 15 – 20 minutes until the cheese is melted, the dough is cooked and the toppings have colored. Continue this process until all pizzas are cooked. Cut into wedges and serve hot.

We usually eat one pizza whilst we have more cooking in the oven. It makes for a long enjoyable dinner. I generally freeze the leftovers and take them out for lunches.
